Is their a recommended Responsive Live Chat plug-in planned or recommended to fit with HikaShop?

You can do that with different extensions for Joomla: extensions.joomla.org/extensions/communi.../live-support-hosted
No need to do anything to "fit with HikaShop" as it's something different which doesn't need an integration with HikaShop to work fine.
