When creating a new order status, I have put information in the Description field, but it does not show up in the actual email being sent out. What am I missing here?
You're not missing anything. That description isn't displayed anywhere.
It's just information you can write for yourself there.
If you want to add custom text based on the status of the order in the notification emails, you'll have to edit the "order status notification" email via the menu System>Emails and add custom code there.
