When I go to Orders and and select the order status "cancelled" and check notify customer there is an preformated email.
Where can i modify it? Because it is not in System > Emails. It's a different one from "Order cancel" email.
This Email is in System > Emails, but his status is dynamic and it's the Order status notification email that manage this with a dynamic status.

It is possible.
When you edit the "order status notification" email, you have a "per status override" button for each area which allows you to modify the area for each order status independently.
