Change Default Country on "Create New Account"

Hi
The Form named "Login or create new account" appears with France as the default country. How can I change this?
And also a minor question :
I don't have categories, all my products appear on the main page. The title is : product category. How can I change this title?

You can go in the menu Display->Custom fields to personalize your custom address field.

You can go in the menu Products->Categories, click on the root category on the explorer and then edit the product category in order to change its name.
