Text when out of stock

Is there somewhere I can change the wording used when a product has a 0 inventory? Right now it says "No stock"...I'd like it to say "Sold Out"

Sure. You can edit all the text in HikaShop by overriding your translation file via the interface in the config under the tab languages.

Can I ask if its possible to have a different out of stock message assigned to each template (in the same way you can adjust checkout etc by template)

Do any of the hikashop "views" crossover the moment when stock levels are checked?

Quantities are check in the file "quantity" of the view "product". So you can edit that view file via the menu Display->Views for each one of your templates and change the text displayed directly there.
