Product page doesn't seem to work as it should

We've been struggling to find an answer to why the products aren't displaying as it appears in the demo. As you can see from the screen grab attached:

The problems are that not of the items are clickable links and their is no way we can see how it would display the individual product with options and the add to cart button.

Is there any help or guidance which explains this in more detail?

You should open the options of the products listing module associated to your menu and turn on the option "link to product page" and you will get the links.
You can find your module's hikashop options via the menu Display->Content modules in the backend of HikaShop.
