I have the last version of hikashop , but the Checkout workflow still look like the old version , any idea what why. thanks

The checkout workflow didn't change between the versions.
If you're talking about the edition interface, it's not displayed in Joomla 1.5 unless you have the mtupgrade plugin installed and activated
