PDF processing before delivery

Is there anyway to add personalised watermarks to sales of PDF files?

I sell digital sheet music and want to automatically add "Licensed to name" to PDFs on delivery

Really sorry for this return, but we aren't sure to fully understand your need.
From your question, it seems that your product is the PDF and so add a watermark can't really be automatically by an HikaShop subject.
Now, maybe we understand it wrong, and so can you explain more the context, and your need through a concrete example, please ?

I am currently using a different cart system where you can add a personalised watermark automatically to a PDF when it is purchased.

That cart is no longer updated and won't work with PHP8 or Joomla 4 so I bought Hikashop essentials.

I was just asking is this feature is available natively or via plugin for Hikashop.

Its a minimal way to try to prevent obvious illegal sharing of files online

There is no feature for that.
As I said here www.hikashop.com/forum/4-how-to/905066-p...delivery.html#345044 it would require some extensive development to be able to do it.
We could develop it into a custom plugin for you but from what I understand, that's a few days of development work and will cost several hundred euros.
