There is the period of time during which the cart will be kept in the database in Hikashop configuration
After that, the cart data will be cleaned to avoid having too much data.

Today we found what hikashop_cart and hikashop_cart_product tables inculdes a lot of records more
than 2 years old even period of time setted to 12 hours and frequency of check time is 1 hour

How to check this work of this feature and how to erase unneccesaty old data from this tables?

I increased frequency to 1 minute but it didn't make any effect, so deleted all records from hikashop_cart and hikashop_cart_product with user_id = 0.

Thanks fot the bots threads links. Bots are constantly putting items in the carts and some of the bots go to the checkout page after that and create a user accounts at various email addresses. This behavior of bots will lead to nothing good. Captcha does not protect against such registration. The registration form needs to be made more secure.
