There is no plugin available for it yet. However, it would be possible to do one by developing a plugin to integrate with their web API:
developers.google.com/pay/api/web/overview

does somebody have developed it? i would like to add it to hikashop

Does something changed or is something going in support this ?
Google Pay is basic pay method like PayPal and it should be in Hikari profitability to provide such basic functionality.
I have to make decision if renew HikaShop Business or switch to another environment (after years)

There's no new "google pay" payment plugin for the moment. We heard that our partner Tsuki Dev had that plugin in their Todo list.

We also know that they were looking for customers to tests their "google pay" payment option usable through their Square payment plugin :

I think that both Square and Multisafepay payment plugins developed by Tsuki Dev allow for it.
Multisafepay claims they support Google Pay (amongst many other payment methods):
