Is it possible to add a field at the checkout to allow a client to add customisation? i.e. text to engrave on an item.

Yes. You can create a custom field of the table "order" (during the checkout) or "item" (above the add to cart button on the product page) of the type "text" via the menu Display>Custom fields:

Please note that these require HikaShop Business.

As it's only a test on a couple of Christmas objects, it's not worth the upgrade to the Business version.
