Your best solution will be to use the Custom field (learn more here ), and reach it :
- From Main HikaShop Configuration, go to Display dropdown => Custom field

In details, you will have to define the Table of your Custom field in order to choose where you want display, your custom field :
Table :
. Item => Directly in the product page (frontend)
. Order => While the Checkout process

I recommend you the "Advance date picker" as Type for your custom field, as result, you will have the date information (define by the customer) in the order backend.
