Options variable showing as not available

I am building a clothing ecommerce store and am having some difficulties with the options. They sell coats in normal sizes and big and tall sizes. I've created characteristics for all the differences in size and options for the big and tall sizes because they cost $10 more. I need to have a "none" option I think so they don't choose from the big and tall option when they aren't ordering a big and tall option.
When I put the item in the cart, it says "The product C61 Big&Tall: None is not available" when I don't select one of the big and tall options. The "none" option is the default option.
I need to be able to let people buy a normal size coat without the big and tall option showing as not available.

I have another question (maybe this is the wrong thread for it) but I wanted your opinion of what would be the best way to configure this site.
They sell clothing. For ex: pants. Pants will come in approx 30 different sizes, 5 or more different colors and a big&tall option.
I've used "characteristics" for the 30 different sizes and for the 5 or more colors.
I've used "options" for the big&tall options (since there is a change in price for big&tall).
Since not all pants come with the same size characteristics, I've had to create different characteristics for each style of pants. So I find that for every product sold, I am creating a new set of characteristics.
This seems like a lot of work for each individual product so I'm just asking if there is an easier way.....

Hello Jeff,

A solution can be to create all your product variants combination automatically and then directly :
- Directly delete the combination that won't be needed

Or
- Export your products through a CSV file
- Edit your products through that CSV file
- Import it back.

If I was to have the manufacterer send me a csv file of all their products, would I be able to upload all of their products in one action or would I still have to create each product individually, and each characteristic and each option individually?
