Hi,

Go in the menu Display>Custom fields and edit the custom field that you want to display on the orders listing. In its settings, you'll find many display options that you can activate or deactivate to display/hide the custom field in different areas. Among them, you'll find the "Back-end Listing" option for the orders listing in the backend.
