You can just uninstall it via the Joomla extensions manager and it will uninstall it.
The plugins and modules of HikaShop will still be installed, so you can uninstall them to.
The moment you uninstall HikaShop these plugins will skip their process without crashing.
The data stored by HikaShop in the database will still be there.
If you want to remove it, you'll have to delete the tables starting with #__hikashop_ in your database. But you can also leave them there if you want. That's not a problem either way.
