Inventory for products with variants

We have some products that have variants that we need to control inventory on. In this case, the variants are all based on size, but the limitation is that each product gets a patch sewn on to the product. We are not limited by the different sizes, we are limited by the number of patches we have to put on the product. It is important that we don't oversell since the patches are custom and cannot be easily obtained.

Would it work to have the variants have unlimited quantity and the parent/main product have a limit? Would each sale of a variant decrease the amount available on the parent/main product and stop selling all sizes once the parent/main product sells out?

Even if you set a quantity for both the variant and the main product, then the quantity will reduced for both.
