Products not displayed under category listings

After 2 days of searching forums and documentation, I have to post.

I am facing the usual problem of products not showing under a category listing button after clicking on any category displayed.

After a LOT of trying and searching I discovered the following:
I did a clean install of the JVFashion temlate. The demo buttons work ok (All Shoes/Heels/Flats/etc). They display the "You have an override on the view 'category / listing' so the settings under the tab 'Product Options' will potentially not be used." message. This message goes away once I save (even with nothing changed). After that the button breaks down and no products are displayed.

Any new category listing button that I create does not show any products (after clicking on a category)

I am obviously missing something here, but I really have no idea what. Please point me to the right direction.
