If all your categories are in the same parent category, you can select the type "hikashop categories listing" in your menu item type, and select that parent category in the "main category" setting of the menu item. That way, the menu item will first display a listing of these categories, and when you click on one, it will display the listing of the products of that category.

There is no option to select several categories in the "main category" setting of HikaShop menu items.
If you really want to do that and no alternative is ok, then you would have to do complex code modifications to the core of HikaShop to allow for that.
An alternative could be to configure several "hikashop content modules" via the Joomla modules manager, one for each category. Then, you could have a Joomla article with all these modules added to it with for example the loadposition system of Joomla:

That way, you would have effectively a page with products listed from different categories.
