Amend Wishlist Charcteristic Option Backend

I just love how we can convert the wishlist in the backend for our customers. However, I can't find a way to amend the characteristic option choices when viewing a customers wishlist from the backend. We have changed the Wishlist text to Quote List and have enabled a way for the customer to email us with the list so we can review it for him. Our products are large and expensive and shipping out a bulk of incorrect items would be a costly mistake. So we offer to look over our clients list and make any corrections to the items they are ordering. We email them back and ask them to review those changes. We can't find a way to add items with choosing the correct variations. We can add the product but have no way to amend it or select the characteristic variations. So we can say add a street light and pole kit but no way of selecting the wattage or pole height/color/guage. How can this be done from the backend?

This is possible, when you are on the product listing popup of the add product to cart view, you can filter on the product type.
You have to select "all" or "variant" instead of "product".
