shipping method restriction

in fact if I click on a method of payment whatsoever, I see all the shipping methods and those previously assigned to each of the methods of payment

Are the payment and shipping on the same step ? If it is, enable the option "Auto submit shipping and payment methods selection" in Configuration > Checkout.

The problem is that the "shipping methods" option enable you to select the payment method regarding the shipping method that you selected, and not to select your shipping method regarding the payment method that you selected.
