Check Out Set up with Contact Information form

Hello -

I am trying to set up the check out process. We currently do not want it connected to an automatic payment method - we just want to collect the data through a form and then call them and process payment over the phone or via check. How do you set up the check out process with:

1. Contact information form - name, shipping address, phone number, email, method of payment they choose to use
2. Receive an email from the system that includes Contact Information listed above and their order.

I think that the best solution will probably be to :
- Set the "Catalogue mode" option to YES through the page "Hikashop->System->Configuration->Features" so that your customers won't be able to proceed to checkout
- Set the "Display a contact button on the product page" option to For all products through the page "Hikashop->System->Configuration->Main" so that your customers will be able to contact you and give your their information

Then you'll just have to "call them and process payment over the phone or via check".
