How to change text in Emails and address_title

I want to do some changes in the Emails. In System > Emails I choose my email and I see several {TXT} fields. Is there a place where I can change the TXT fields. Or do I have to change the text directly in the HTML version of Emails? By example to delete the {TXT} fields and put there my own text?

Second: I have changed the own fields for the address_title. Set some of the item-values on disabled. But on the frontend and in the example in the backend I still see the old values?

For the second item I have found a solution myself. Easily made a new 'own field'.

For the mail I want to change the text in the conformation mail to those how do a transaction in my webshop.
I want to fill in my own text there. So that is customizing the automatic mail in the shop.

Ok, so note that you'll also be able to customize the TXT tag of your email, directly by editing it through your language file .
for example for the :

  {TXT:SUMMARY_OF_YOUR_ORDER}

SUMMARY_OF_YOUR_ORDER="Summary of your order"
