Changing incremental order/invoice number format

Hi, with our test system when we are adding an order or checking out and producing an invoice we are getting an odd number format. that increments as follows: B1, C2, D3, E4, F5, G6

Are able to configure this ourselves - I cannot see where - and choose what is incremented, i.e. just the number rather than the initial letter as well?
