Turn off "Shipping Method" or edit text

We are using Paypal to calculate shipping so we would like the "Shipping Method" option turned off. (Or we would like to edit the text if this first option is not possible or advisable.)

One last thing: How do I turn off these at the bottom of checkout:
You chose the shipping method: Free US Shipping
You chose the payment method: PayPal

Thanks that worked. However, the cart still shows "$0 Shipping" but we plan to set Paypal to calculate shipping which will of course confuse shoppers. How do we remove the "Shipping" option at the bottom of checkout. Or, better yet, how do we set up these shipping variables in Hikashop so we do not need to use Paypal?

As Nicolas said:

Remove the "shipping" view from the "Checkout workflow" option of the HikaShop configuration and you won't see that on your checkout anymore.

So you should not have it displayed.

You can configure any shipping methods in HikaShop, you can use manual shipping, and set 3 shipping methods with the desired restrictions.
When setting up a shipping method, you can find a "restriction" part, just check the checkbox and then fill the minimum price value field, etc depending on your needs, and restrict the shipping method to a desired zone.

OK, I got the 3 shipping methods setup.

Now everything is working except I do not know how to choose "All countries except USA" for International Shipping.

I tried but could not find the trick to doing this.
