How can I create a coupon that applies to one item per products?

How can I create a coupon that applies to an entire category in percentages, but only applies to one product of a type? I can create the coupon, but it only applies to one item, and when I buy another item, it counts it as a second product and tells me that I cannot use the coupon. The idea is that the discount should only apply to one item, but I should be able to buy 5 items, for example. Is there a way to do this?
