For some time we've had an issue with inventory of products not updating when ordered. We do have the option "Update the product stock on confirmed status" turned on. So, when the customer pays and the order status changes to payment confirmed, the inventory should be decremented appropriately. Yet, we ended up having to manually update stock levels periodically, which is a bit of a pain.
