Tabular Display

For some reason my product page is not dispaying in Tabular Mode - where in the configuration can I set this up?

HikaShop backend -> System -> Configuration -> Display tab -> Default parameters for products -> Layout on product page.

I checked the configuration and it is indeed set to tabular - do you think that it is some css that is causing the issue?

Checked a few of your products, finding that you do have "tabular" set. Firebug doesnt lie.
It's probably impossible for you to tell since there's not really any "content" to be tab'd or listed or so. Add the fact that your template could "bend" things around a bit, it's really more guessing - without smart tools. See, the difference is really in the description part, custom fields, etc. Have some of that and see what you're getting? Welcome to your tabs then!
