1. The email validation is send and manage by Joomla, not by HikaShop.
2. HikaShop 2.3 includes the "datepicker custom field" plugin.
With HikaShop business you will be able to create an "order custom field", and using the datepicker type, you will have the required feature.
3. You can use a manual payment method during the checkout, to create the order.
After that, you will have to process the payment manually or modify the payment method in the order and ask the customer to relaunch the payment process.
4. The open/close option in HikaShop does not have enough values but you can extend it using a view override of the view "checkout | step".

5. HikaShop have a lot of payment methods, like "collect on delivery" which is a manual payment method.
