The stock of products is updated either when an order is created, or when its status is confirmed.
This depends on the setting "Update the product stock on confirmed status" of the HikaShop configuration.
And then, if you have that option activated, the order statuses have to change when receiving the payment notification from the payment gateway, and it has to change to the status selected for the "confirmed" column of the menu System>Order statuses.
So it's probably that you have that setting activated and selected another status than the one your orders are changed to upon payment, or that your website is not receiving the payment notifications from the payment gateway.
If you just want to test the stock management, turn off that setting and the stock will update as soon as the order is created at the end of the checkout, before the payment.
