How can I generally hide the available quantity, product list and product detail page?

Hi,

The stock will display automatically. However, you can use translation overrides to not have it appear on the frontend.
For that, you want to change the translation keys : X_ITEM_IN_STOCK and X_ITEMS_IN_STOCK
And maybe NO_STOCK
