How to disable Categories for a vendor user.

Hello,

I would like to know how to disable these links and also categories in the vendor user.

I attached two pictures and I want to disable the highlighted areas.

P.S. Beside the images attached, I would like to disable some fields from the add product vendor page, is this possible? Or do I have to override the files and if yes which file shall be overridden?
