Order-Export. Defining fields to be exported

1. Where can I specify which fields are exported? If i exporting Orders to .xls, countless fields are exported that I don't need.

2. Also, umlauts are displayed incorrectly, so I think the format is wrong. Österreich = Österreich

3. Exported Products looks like that: 20.8. Bad Radkersburg Jufa<span class="hikashop_product_variant_subname">: Einzelzimmer</span>
Also not good.

Where can I set that?
