How to hide item in stock field

I need to hide the "1 item in stock" for all products showing in the Category listing. Due to the nature of this business we need to protect the store from potential vandalism or even worse robbery. By showing what we may or may not have in stock particularily the amount we put ourselves and our staff at risk.
